Spring Quinoa Salad

Ingredients
  • 1 cup cooked quinoa
  • 3 cups fresh spinach leaves
  • 1 ripe avocado
  • 1 cup strawberries
  • 1 cup blueberries
  • 1/2 cup walnuts
  • 1/2 cup pine nuts
  • 1/2 cup coconut flakes
  • 4 chopped mint leaves
Instructions
  1. After quinoa is cooked and cooled off, throw all ingredients together in a large bowl and mix together. If you didn't use a ripe avocado, use a strawberry vinaigrette or extra virgin olive oil for dressing.
