A sparkling strawberry prosecco smash
Hi, hi! Big life changes have sort of put blogging on hold for the time being, but that’ll happen I guess!
From moving to a new city, starting a new job and deciding to rescue a Goldendoodle puppy, it’s safe to say we’ve had our hands full this last month, but have been loving the slow weekends and settling into our new place. ❤️
A side note: this blog has been such an important outlet for me the last few years, and I was suddenly reminded this weekend how much I miss Sunday’s spent in the kitchen and preparing for a new post. It feels good to be sharing this one today!
Summer typically flies by too fast, and this year even quicker after moving to STL and jumping into a new job. Thankfully the sunshine stays a little longer in Missouri and we are still having 70 and 80 degree days, but it did drop to the 60s this past weekend and I was quickly reminded how quickly fall is approaching. Ugh.
With that being said, I’m trying to hold on to summer a tad bit longer this year. And what better way to do that than sipping on this refreshing strawberry prosecco smash? The strawberries mixed with coconut cream and lemon make this cocktail a favorite of mine and I know you’ll be sure to love it, too!
Strawberry Prosecco Smash
Yield: Makes one cocktail
What you’ll need
three strawberries, diced
1 ounce cream of cocounut
1/2 tsp honey
1/2 lemon, squeezed
Prosecco
Directions
- Muddle strawberries in a cocktail shaker until juices release.
- Squeeze lemon, add honey and cream of coconut. Add little ice.
- Shake vigorously for ten seconds and pour into glass. FYI, It’s super thick, so you don’t need to strain all of it if you don’t want to. You can pour it straight into the glass if you’d like!
- Top with champagne, garnish with thyme (optional) and enjoy!
