I’ve always envied people who were full after eating a salad, because I’ve never been one who is satisfied after eating greens and a few slices of fruit or veggies. Buttttt, since it’s time to detox because bikini season is approaching fast, I decided it was time to step outside my anti-salad bubble and find a good recipe that worked for me.
I recently saw a fun recipe that include quinoa and knew this ingredient would be the answer to my salad problem. I can’t believe I never thought of quinoa before! It works with anything and makes any meal satisfying for me. I added the quinoa with avocado, berries, nuts, and WOW. It ended up being perfect and exceeded all expectations.
If you’re a salad person you’re probably like, “yep, quinoa… where has this girl been?” But like I said before, I’ve never been one to be satisfied by the salads I’ve had in the past, so I tend to ignore the recipes I see on the internet. I guess I just need to get on Pinterest more! 😉
This will be my new go-to Friday lunch for the rest of Lent. Prior to this, I would make myself a caesar salad for lunch and would be starvinggg by the time 3pm rolled around. Hats off to you if you’re vegan. I don’t know how you do it all day everyday!

- 1 cup cooked quinoa
- 3 cups fresh spinach leaves
- 1 ripe avocado
- 1 cup strawberries
- 1 cup blueberries
- 1/2 cup walnuts
- 1/2 cup pine nuts
- 1/2 cup coconut flakes
- 4 chopped mint leaves
After quinoa is cooked and cooled off, throw all ingredients together in a large bowl and mix together. If you didn't use a ripe avocado, use a strawberry vinaigrette or extra virgin olive oil for dressing.
